
South Karnataka Tomato Gojju
Sweet-sour-spicy tomato concentrate with jaggery and tamarind. South Karnataka rice mix-in, tangy and addictive.

Ingredients
Main
- salt (optional) (whole)
- rice — 100 g (ground)
- Tomato — 250 g (chopped)
- Jaggery — 100 g (whole)
- Tamarind — 100 g (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Wash the rice and cook it in enough water until soft, then drain off any excess water and keep aside.
- Soak the tamarind in a little warm water, extract a thick pulp and discard the fibre and seeds.
- Wash and finely chop the tomatoes.
- Heat the coconut oil in a pan, add the chopped tomatoes and saute on medium heat until they turn soft and mushy.
- Add the tamarind pulp, jaggery and salt, mix well, and simmer, stirring often, until it thickens to a jam-like gojju.
- Add the cooked rice and mash it lightly into the gojju so everything binds together.
- Cook for another 2 to 3 minutes on low heat, then turn off and let it cool slightly before serving.
