South Karnataka Tomato Gojju

  1. Wash the rice and cook it in enough water until soft, then drain off any excess water and keep aside.
  2. Soak the tamarind in a little warm water, extract a thick pulp and discard the fibre and seeds.
  3. Wash and finely chop the tomatoes.
  4. Heat the coconut oil in a pan, add the chopped tomatoes and saute on medium heat until they turn soft and mushy.
  5. Add the tamarind pulp, jaggery and salt, mix well, and simmer, stirring often, until it thickens to a jam-like gojju.
  6. Add the cooked rice and mash it lightly into the gojju so everything binds together.
  7. Cook for another 2 to 3 minutes on low heat, then turn off and let it cool slightly before serving.
