- All-purpose Flour — 250 g (ground)
- sugar — 0.5 cup (whole)
- salt (optional) (whole)
- Ghee — 100 g (whole)
Tempering
- Mustard Oil — 2 tbsp (whole)
Method
- Mix maida with a pinch of salt and enough water into a thick batter for extra-large spirals; cover and let it ferment at room temperature for 24-36 hours until slightly sour and bubbly.
- Whisk the fermented batter well just before frying.
- Make the sugar syrup by dissolving sugar in water with crushed cardamom, simmering until it reaches one-string consistency; keep it warm.
- Heat pure ghee, with a touch of mustard oil as sold at the Sonepur Mela stalls, in a large wide pan on medium flame.
- Pipe the thick batter into the hot ghee in large, wide overlapping spirals to form the extra-large mela-style jalebi.
- Fry until deep golden and crisp on both sides, turning once.
- Lift straight from the ghee and dip immediately into the warm sugar syrup for about a minute; serve piping hot.
