
Arsa Roti

- Rice Flour — 250 g (ground)
- Jaggery — 100 g (whole)
Tempering
- Mustard Oil — 2 tbsp (whole)
Method
- Melt the jaggery with a little water in a pan on low heat, stirring till it dissolves into a smooth syrup, then strain to remove any impurities.
- Add the rice flour and salt to the warm jaggery syrup and mix well to form a soft, smooth dough.
- Crush the cardamom seeds and knead them into the dough for flavour.
- Divide the dough into small portions and flatten each into a small round roti or patty using your palms.
- Heat mustard oil in a kadai on medium heat.
- Slide the shaped rotis into the hot oil and deep fry on low to medium heat, turning occasionally, till both sides turn golden brown and crisp.
- Remove with a slotted spoon and drain on absorbent paper.
- Serve the arsa roti warm or at room temperature.
