  1. Mix maida with a pinch of salt and enough water into a thick, smooth batter -- thicker than usual, for the characteristic thick Amritsari spirals; cover and ferment at room temperature for 24-36 hours until slightly sour and bubbly.
  2. Whisk the fermented batter well before frying.
  3. Prepare the sugar syrup: dissolve sugar in water, bring to a boil with crushed cardamom, and simmer to one-string consistency; keep warm.
  4. Heat pure ghee in a wide, shallow pan on medium flame -- Amritsari halwais fry jalebi exclusively in ghee for its distinct richness.
  5. Pipe the thick batter into the hot ghee in tight overlapping spirals to form thick jalebi coils.
  6. Fry until deep golden and crisp on both sides, turning once.
  7. Lift straight from the ghee and dip immediately into the warm sugar syrup for 30-60 seconds; serve piping hot.
