Creamy Mughlai paneer curry: soft paneer cubes simmered in an onion, tomato and almond gravy enriched with curd, cream and saffron. Mildly sweet, rich and restaurant style.

Method

  1. Heat oil in a pan. Add bay leaf, cardamom and cumin seeds and let them splutter.
  2. Add ginger, garlic and chopped onions. Saute until the onions turn golden.
  3. Add chopped tomatoes and almonds. Cook until the tomatoes soften.
  4. Cool the mixture, add curd and blend to a smooth paste. Strain for a silky gravy.
  5. In a kadhai heat butter, add turmeric, red chilli powder and coriander powder and saute briefly.
  6. Pour in the strained puree and cook until the fat separates.
  7. Add fresh cream, salt and a little water. Simmer for a few minutes.
  8. Add the paneer cubes, saffron and sugar. Simmer 5 minutes until the flavours blend.
  9. Crush the kasuri methi and add with a pinch of pepper. Mix gently.
  10. Garnish with coriander leaves and serve hot with naan or roti.
