
Shahi Paneer
Creamy Mughlai paneer curry: soft paneer cubes simmered in an onion, tomato and almond gravy enriched with curd, cream and saffron. Mildly sweet, rich and restaurant style.

- Cardamom — 3 piece (ground)
- onion — 150 g
- Curd — 60 g
- salt — 1 tsp (whole)
- cumin — 1 tsp (ground)
- black pepper — 2.75 g (ground)
- bay leaf — 1 piece (whole)
- oil — 2 tbsp (whole)
- Ginger — 10 g
- Tomato — 120 g
- Garlic — 4 piece (chopped)
- Paneer — 200 g (fresh)
- Red Chilli Powder (Lal Mirch) — 1 tsp
- Turmeric Powder — 0.5 tsp (ground)
- badam — 20 g
- Fresh Cream — 60 g
- sugar — 1 tsp (whole)
- Kasuri Methi — 2 tbsp (ground)
- Saffron (optional) — 0.4 pinch
- Butter — 2 tbsp (whole)
- coriander powder — 1 tsp (ground)
Method
- Heat oil in a pan. Add bay leaf, cardamom and cumin seeds and let them splutter.
- Add ginger, garlic and chopped onions. Saute until the onions turn golden.
- Add chopped tomatoes and almonds. Cook until the tomatoes soften.
- Cool the mixture, add curd and blend to a smooth paste. Strain for a silky gravy.
- In a kadhai heat butter, add turmeric, red chilli powder and coriander powder and saute briefly.
- Pour in the strained puree and cook until the fat separates.
- Add fresh cream, salt and a little water. Simmer for a few minutes.
- Add the paneer cubes, saffron and sugar. Simmer 5 minutes until the flavours blend.
- Crush the kasuri methi and add with a pinch of pepper. Mix gently.
- Garnish with coriander leaves and serve hot with naan or roti.
