  1. To begin making the Lehsuni Methi Paneer, soak the cashews in 1/4 cup warm water for about an hour, then grind them along with the ginger, garlic and green chillies into a smooth paste using the soaked water.
  2. In a bowl, whisk together the ground cashew paste, fresh cream, curd, garam masala powder, cardamom powder and salt into a smooth, lump-free mixture.
  3. Heat ghee in a pan on low heat, add the cashew-cream-curd mixture and cook it gently, stirring continuously so the curd does not split, for 3 to 4 minutes.
  4. Add the paneer cubes, pour in a little water to adjust the consistency and simmer on low heat for about 5 minutes. Check the salt and adjust to taste.
  5. Crush the kasuri methi between your palms, stir it in, then cover the pan and turn off the heat so the methi flavour infuses. Serve the Lehsuni Methi Paneer hot with roti, naan or jeera rice.
