Method

  1. Chop the onions and tomatoes roughly. Crush the ginger and garlic into a paste. Cut the paneer into cubes.
  2. Soak the cashew nuts in warm water for 10 minutes, then grind into a smooth paste.
  3. Heat the oil in a kadai and add the cumin seeds. Let them sizzle.
  4. Add the chopped onions and saute until golden brown, then add the ginger garlic paste and cook for a minute.
  5. Add the chopped tomatoes, turmeric powder and red chilli powder, and cook until the tomatoes turn soft and the mixture leaves oil.
  6. Cool slightly and blend this mixture into a smooth puree, then return it to the pan.
  7. Add the cashew paste, salt and a little water, and simmer on low heat for 5 minutes, stirring often.
  8. Add the saffron and fresh cream, and mix well, then gently add the paneer cubes and simmer for 3 to 4 minutes without breaking them.
  9. Garnish with chopped coriander leaves and serve hot with naan or paratha.
