
Palak Paneer
Paneer cubes in smooth spinach puree with cream. Protein-rich MP winter favourite.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Spinach (Palak) — 250 g (chopped)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- onion — 2 piece (chopped)
- Turmeric Powder — 0.5 tsp (ground)
- Fresh Cream — 100 g (whole)
- salt (optional) (whole)
- coriander powder — 1 tsp (ground)
- Ginger — 1 tsp (ground)
- Tomato — 2 piece (chopped)
- Paneer — 250 g (whole)
- Garlic — 1 tsp (ground)
Tempering
- Cumin Seeds — 1 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Blanch the spinach in boiling water for 2-3 minutes, then plunge into cold water; drain and blend to a smooth puree.
- Heat oil in a kadhai; add cumin seeds and let them splutter.
- Add chopped onion and saute until golden brown.
- Add ginger-garlic paste and saute until the raw smell disappears.
- Add chopped tomato and cook until soft and the oil separates.
- Add turmeric, red chilli powder and coriander powder; mix well.
- Add the spinach puree and simmer for 5 minutes, then add the paneer cubes and cook for 3-4 minutes.
- Stir in the fresh cream, adjust salt, and simmer for 2 minutes.
- Garnish with coriander leaves and serve hot with roti or naan.
