Authentic Sindhi-Hindu Seyun Patata — a classic sweet-savoury breakfast combo. Roasted vermicelli (seyun) cooked in ghee with cardamom and sugar, served alongside spiced fried potatoes (patata). Iconic Sindhi-Hindu Sunday breakfast and customarily sent (along with Dal-Pakwan) to a newlywed daughter's in-laws. Also offered to Brahmins during Shraadh rituals. The sweet-spicy contrast on one plate is the Sindhi signature.

  1. FOR THE PATATA: Soak cubed potatoes in water for 30 minutes (helps remove excess starch and crisp the fry).
  2. Drain potatoes and pat dry. Heat 2 tbsp oil in a wide pan on medium. Add potatoes and shallow-fry, turning occasionally, 12-15 minutes until edges are crisp and golden and centers are tender. Sprinkle salt during last 2 minutes.
  3. Reduce heat. Sprinkle turmeric, red chilli powder, coriander powder, cumin powder, and amchoor over the potatoes. Toss to coat evenly. Cook 1 more minute. Remove and keep warm.
  4. FOR THE SEYUN: Heat 3 tbsp ghee in a heavy-bottomed pan on medium. Add the broken vermicelli. Roast on medium-low, stirring constantly, 4-5 minutes until uniformly golden-brown.
  5. Sprinkle cardamom powder and stir 10 seconds.
  6. Pour in 2 cups of hot water carefully (it will splatter). Stir well to break any clumps.
  7. Add sugar. Stir until dissolved. Reduce flame to low.
  8. Cover and simmer on lowest flame 8-10 minutes until vermicelli is fully soft and water is absorbed. The seyun should be moist but not soupy.
  9. Switch off heat. Garnish seyun with slivered almonds and crushed pistachios.
  10. Serve seyun and patata SIDE BY SIDE on the same plate — alternating spoonfuls of sweet vermicelli and spicy potato is the Sindhi way.
