
Sambaram (Spiced Buttermilk)
A traditional Kerala vegetarian liquid dish. A cooling Kerala buttermilk spiced with ginger, green chillies, and curry leaves.

Ingredients
- salt (optional) (whole)
- Ginger — 6 g (crushed)
- Curry Leaves — 2 g (whole)
- Water — 2 cup (whole)
- green chillies — 6 g (chopped)
- Curd — 250 g (whole)
Method
- Peel and crush the ginger, and slit the green chilli.
- Whisk the curd with water in a bowl or blend briefly until smooth.
- Add the crushed ginger, slit green chilli, curry leaves and salt to the buttermilk.
- Mix well and let it rest for a few minutes so the flavours infuse.
- Chill and serve cold, giving it a quick stir before pouring.
