A traditional Telangana vegetarian dry dish. Concentric rice flour rings deep-fried to a crisp, a Sankranti festive snack.

Method

  1. In a bowl combine rice flour, sesame seeds, ajwain, cumin seeds and salt.
  2. Add a little hot oil and warm water gradually and knead into a smooth, pliable dough that holds shape.
  3. Take small portions and, on a greased sheet or palm, shape the dough into concentric rings by twisting it between your fingers.
  4. Heat oil in a deep pan. Gently slide the rings in and deep fry on medium flame, turning once, until golden and crisp.
  5. Drain on paper towels and cool completely. Store the sakinalu in an airtight container.
