Method

  1. In a bowl, mix rice flour, urad dal flour, sesame, a pinch of asafoetida and salt.
  2. Add coconut oil and rub into the flour until it resembles breadcrumbs, then add water gradually and knead into a smooth, soft dough.
  3. Grease a murukku press/chakli maker, fill it with the dough and press out spiral shapes onto a greased plate or butter paper.
  4. Heat oil in a deep kadai on medium flame; slide the murukku in gently and fry, turning once, until golden brown and crisp.
  5. Drain on paper towels, cool completely and store airtight; serve with filter coffee or tea.
