
Raipur Chana Samosa
Samosas filled with spiced chickpeas instead of potatoes. Unique Raipur street food variation.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Gram Flour — 1 cup (ground)
- All-purpose Flour — 220 g
- ajwain — 3 g
- salt (optional) (whole)
- Chana Dal — 250 g (whole)
Tempering
Method
- Soak the chana dal for 1-2 hours, then boil until soft; drain well and coarsely mash.
- Knead a stiff dough with the maida, ajwain, a little oil and water; cover and rest for 20-30 minutes.
- Heat a little oil in a pan and cook the mashed chana dal with the gram flour and salt for a few minutes until it binds together into a firm filling; let it cool completely.
- Divide the dough into balls, roll each into an oval, cut in half, shape into a cone, fill with the chana mixture, and seal the edges with a little water.
- Heat oil in a kadhai on low-medium flame and deep-fry the samosas slowly, turning occasionally, until golden brown and crisp on all sides.
- Drain on paper towels and serve hot, garnished with coriander leaves, along with chutney.
