
Hyderabadi Keema Samosa
Crispy samosa stuffed with spiced keema. Old City Hyderabad Muslim snack staple.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- salt (optional) (whole)
- Mutton — 250 g (chopped)
- onion — 100 g (chopped)
- Turmeric Powder — 1 g (whole)
- green chillies — 8 g (chopped)
- coriander powder — 3 g (whole)
- ginger garlic paste — 15 g (paste)
- All-purpose Flour — 220 g (ground)
- garam masala powder — 3 g (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Knead maida with a little oil and water into a stiff dough. Cover and rest for 20-30 minutes.
- Heat oil in a pan, add chopped onion and saute until golden. Add ginger-garlic paste and green chilli, cook until raw smell disappears.
- Add the minced mutton and cook on high flame, breaking up lumps, until it changes colour.
- Add turmeric, coriander powder and garam masala. Cover and cook on low flame until the mutton is fully cooked and the mixture is dry. Cool completely, then mix in coriander leaves.
- Roll the dough into thin ovals, cut in half, shape each half into a cone, fill with the keema mixture and seal the edges with water.
- Deep fry in a kadhai on low-medium flame for 15-20 minutes until golden and crisp. Drain and serve hot with chutney.
