Goan Samosa

Goan-style samosa with coconut and spiced potato filling. Crispier and slightly sweeter than North Indian.

Method

  1. Knead maida with a little oil and water into a stiff dough. Cover and rest for 20-30 minutes.
  2. Boil the potato, peel and mash coarsely. Heat coconut oil, saute chopped onion until soft.
  3. Add turmeric, red chilli powder, garam masala and coriander powder to the onion, saute briefly.
  4. Add the mashed potato and grated coconut, mix well and cook for 2-3 minutes. Cool completely, then stir in coriander leaves.
  5. Roll the dough into thin ovals, cut in half, shape each half into a cone, fill with the potato-coconut mixture and seal the edges with water.
  6. Deep fry in a kadhai on low-medium flame until golden and crisp. Drain and serve hot with chutney.
