Method

  1. Boil the potatoes until fork-tender, then peel and coarsely mash them. Heat a little oil in a pan, add cumin seeds and let them sizzle, then add crushed coriander seeds, ginger, green chillies and asafoetida; saute for a minute.
  2. Add the green peas and mashed potato to the pan along with garam masala and amchur. Mix well, mash lightly and cook for 3-4 minutes. Stir in the coriander leaves and adjust salt. Cool the filling completely.
  3. For the dough, mix the maida, ajwain and salt in a bowl. Rub in a little oil until the mixture resembles breadcrumbs, then add water gradually and knead into a stiff dough. Cover and rest for 20-30 minutes.
  4. Divide the dough into balls, roll each into an oval, cut in half, and fold each half into a cone. Fill each cone with the potato-pea mixture and seal the edges with a little water.
  5. Heat the remaining oil in a deep kadhai on low-to-medium flame. Slide in the samosas and fry slowly for 15-20 minutes, turning occasionally, until deep golden and flaky. Drain and serve hot with chutney and masala chai -- the classic Ambala Cantonment railway platform style.
