
Haryanvi Samosa
Crispy triangular pastry filled with spiced potato-peas. Haryanvi street food staple.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 2 g
- garam masala powder — 3 g
- Turmeric Powder — 1 g
- Potato — 400 g (chopped)
- Cumin Seeds — 3 g
- Ginger — 12 g
- All-purpose Flour — 1 cup (ground)
- green peas — 100 g (chopped)
- Amchur (Whole Dried Green Mango Slices) — 5 g
- green chillies — 8 g
- salt (optional) (whole)
Tempering
Method
- Boil the potatoes until fork-tender, then peel and coarsely mash them.
- Knead the maida into a stiff dough with a little oil and water. Cover and rest for 20-30 minutes.
- Heat oil in a pan, add cumin seeds and let them splutter.
- Add ginger and green chillies and saute for a few seconds.
- Add the green peas, mashed potato, turmeric powder, red chilli powder, amchur and salt. Mix well and cook for 2-3 minutes.
- Add garam masala powder and coriander leaves, mix well and cool the filling completely.
- Roll the dough into small ovals, cut in half, shape into cones and fill with the potato-pea mixture. Seal the edges with water.
- Heat oil in a deep kadhai on medium flame. Fry the samosas slowly until golden brown and crisp on all sides.
- Drain on paper towels and serve hot with chai and green chutney.
