
Poori Paratha
Spiral-layered wheat and maida dough, rolled to create fine laminations, then deep-fried until puffed and golden - combining the flakiness of a lachha paratha with the puff of a poori. A festive North Indian breakfast served hot with aloo sabzi or chole.

Ingredients
- Wheat Flour (Atta) — 2 cup (ground)
- oil — 2 tbsp (whole)
- All-purpose Flour — 1 cup (ground)
- sugar — 1 tsp (whole)
Method
- firstly, in a large bowl take 2 cup wheat flour, 1 cup maida, 1 tsp sugar, ½ tsp salt and 2 tbsp oil.
- mix well making sure everything is well combined.
- add water as required and start to knead the dough.
- knead to a smooth and soft dough.
- tuck the dough, cover, and rest for 20 minutes.
- now pinch a ball-sized dough and dust with maida.
- roll gently and spread oil and maida.
- now cut one side and roll spiral.
- dust with maida and roll slightly thick as paratha.
- deep fry in hot oil.
- press gently, until the poori puffs up.
- fry both the sides until the poori turns golden brown.
- finally, enjoy poori paratha with aloo matar sabji.
