
Desi Ghee Paratha
Multi-layered wheat paratha loaded with pure desi ghee, pan-toasted until flaky and golden. A hearty Karnal-style dairy-belt breakfast, best served hot.

Main
- Ghee — 60 g (whole)
- salt (optional) (whole)
- Wheat Flour (Atta) — 250 g (ground)
- oil — 2 tbsp (whole)
Method
- In a bowl, combine wheat flour and salt. Add curd and a little ghee, then add water gradually and knead into a soft, smooth dough. Rest covered for 20 minutes.
- Divide into portions. Roll each ball into a thin disc, smear generously with desi ghee, dust with flour, then fold into pleats and coil into a spiral. Flatten and roll out again into a round paratha.
- Heat a tawa on medium. Roast the paratha on both sides, applying desi ghee, pressing gently with a spatula until golden and crisp with flaky layers.
- Crush lightly to reveal the layers. Serve hot with curd, pickle or a vegetable curry.
