Ingredients
- salt (optional) (whole)
- Wheat Flour (Atta) — 250 g (ground)
Method
- In a large bowl, add the wheat flour and a pinch of salt. Gradually add water and knead into a soft, smooth dough. Cover and rest the dough for 15 to 20 minutes.
- Knead the dough again briefly, then divide it into equal small balls.
- Dust a rolling board with a little wheat flour, and roll each ball into a thin, even round roti.
- Heat a tawa on medium-high flame. Place the rolled roti on the hot tawa and cook for about 20 to 30 seconds until small bubbles start appearing on the surface.
- Flip the roti and cook the other side for another 20 to 30 seconds until light brown spots appear.
- Using tongs, lift the roti and place it directly over an open flame for a few seconds on each side, so it puffs up fully like a ball.
- Remove the phulka and lightly smear with ghee if desired.
- Serve the hot, soft Phulka Roti immediately with dal or curry of your choice.
