
Petha Wadi Sabzi
Petha Wadi Sabzi is a traditional UP/North Indian dry-wadi (lentil nugget) and petha (white pumpkin) curry. Sun-dried wadis are fried golden in oil, then simmered with diced petha in an onion-tomato masala medium gravy. Useful during monsoon when fresh vegetables are scarce. Served warm with roti or rice.

- Ginger — 0.5 piece (chopped)
- Red Chilli Powder (Lal Mirch) — 1 tbsp (ground)
- onion — 2 piece (chopped)
- Coriander Leaves (optional) (ground)
- badi — 1 cup (whole)
- coriander powder — 1 tsp (ground)
- Sunflower Oil — 2 tbsp (whole)
- Garlic — 4 piece (chopped)
- Turmeric Powder — 0.25 tsp (ground)
- salt (optional) (whole)
- Ash Gourd — 450 g (chopped)
- green chillies — 4 piece (chopped)
- Tomato — 2 piece (chopped)
Tempering
- Cumin Seeds — 1 tsp (whole)
Method
- Heat the sunflower oil in a pan and lightly fry the badi till golden brown, then remove and keep aside.
- In the same oil, add the cumin seeds and let them crackle.
- Add the finely chopped onions and saute till translucent, then add the ginger, garlic and slit green chillies and saute till fragrant.
- Add the finely chopped tomatoes and cook till mushy, then stir in the turmeric powder, red chilli powder, coriander powder and salt and cook for 3 to 4 minutes.
- Add the ash gourd cubes with salt, mix well with the masala, then cover and cook on medium heat for 5 to 6 minutes till the pieces start turning soft.
- Add the fried badi along with half to three-fourth cup water, cover and cook till the badi turns soft, the ash gourd is fully tender and the gravy thickens.
- Garnish with coriander leaves and serve hot.
