  1. Soak urad dal for 4-6 hours, then grind to a smooth thick batter with minimal water; whisk in salt until light and fluffy.
  2. Wet your palm, flatten small portions of batter into discs and deep-fry in oil on medium heat until golden on all sides.
  3. Drop the hot fried vadas into water for 5-8 minutes, then gently squeeze out the water.
  4. For the tempering, heat coconut oil, splutter mustard seeds, then add curry leaves, chopped green chilli and turmeric powder. Whisk this into the curd along with salt and a little red chilli powder.
  5. Soak the squeezed vadas in the seasoned curd for 2-3 hours in the refrigerator. Garnish with coriander leaves and serve cold.
