Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Curd — 100 g (whole)
- salt (optional) (whole)
- Turmeric Powder — 0.5 tsp (ground)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Urad Dal — 100 g (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
- Mustard Seeds (Black) — 1 tsp (whole)
- green chillies — 8 g
- Curry Leaves — 8 piece (ground)
Method
- Soak urad dal for 4-6 hours, then grind to a smooth thick batter with minimal water; whisk in salt until light and fluffy.
- Wet your palm, flatten small portions of batter into discs and deep-fry in oil on medium heat until golden on all sides.
- Drop the hot fried vadas into water for 5-8 minutes, then gently squeeze out the water.
- For the tempering, heat coconut oil, splutter mustard seeds, then add curry leaves, chopped green chilli and turmeric powder. Whisk this into the curd along with salt and a little red chilli powder.
- Soak the squeezed vadas in the seasoned curd for 2-3 hours in the refrigerator. Garnish with coriander leaves and serve cold.
