
Bihar Dahi Wada
Urad dal fritters soaked in creamy yogurt with cumin and chaat masala. Bihar summer cooling snack and festival dish.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Curd — 250 g (whole)
- salt (optional) (whole)
- Urad Dal — 200 g (whole)
Tempering
- Mustard Oil — 2 tbsp (whole)
Method
- Soak the urad dal for 4-5 hours, then drain and grind to a smooth, fluffy batter with very little water. Add salt and whisk well.
- Heat oil for deep-frying. Drop small portions of batter and fry the vadas on medium flame until golden and cooked through.
- Soak the fried vadas in warm water for 15-20 minutes, then gently squeeze out the water.
- Whisk the fresh curd with a little salt until smooth and creamy.
- Arrange the squeezed vadas in a dish and pour the whisked curd over them so they are well coated.
- Chill, then garnish with coriander leaves (and roasted cumin powder / chaat masala if liked) before serving.
