Method

  1. Soak the urad dal for 4-5 hours, then drain and grind with minimal water into a smooth, fluffy batter. Whisk well by hand to add air.
  2. Heat oil in a kadhai. Drop small portions of batter and deep-fry the bhalle on medium flame until golden brown. Drain on paper towels.
  3. Soak the fried bhalle in warm water for 10 minutes to soften, then gently squeeze out excess water.
  4. Simmer tamarind in a little water until soft and mushy, then mash and strain into a tangy-sweet chutney.
  5. Whisk the curd with a little water and salt until smooth and pourable.
  6. Arrange the softened bhalle on a serving plate and pour the whisked curd generously over them.
  7. Drizzle the tamarind chutney, sprinkle roasted cumin powder and chaat masala, garnish with coriander leaves. Chill and serve cold.
