
Dahi Vada

Ingredients
Garnish
- cumin powder (optional) (garnish) — 2 g (powder)
- Chaat masala (optional) (garnish) — 1 tsp (whole)
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Urad Dal — 100 g (whole)
- Tamarind — 100 g (whole)
- Curd — 250 g (whole)

Tempering
Method
- Soak the urad dal for 4-5 hours, then drain and grind with minimal water into a smooth, fluffy batter. Whisk well by hand to add air.
- Heat oil in a kadhai. Drop small portions of batter and deep-fry the vada on medium flame until golden brown. Drain on paper towels.
- Soak the fried vada in warm water for 10 minutes to soften, then gently squeeze out excess water.
- Simmer tamarind in a little water until soft and mushy, then mash and strain into a tangy-sweet chutney.
- Whisk the curd with a little water and salt until smooth and pourable.
- Arrange the softened vada on a serving plate and pour the whisked curd generously over them.
- Drizzle the tamarind chutney, sprinkle roasted cumin powder and chaat masala, garnish with coriander leaves. Chill and serve cold.
