
Papad Mangodi Sabzi

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- salt (optional) (whole)
- coriander powder — 1 tsp (ground)
- Urad Dal Papad (Plain White Grade) — 2 piece
- Mangodi — 80 g
- Turmeric Powder — 0.5 tsp (ground)
- Curd — 240 g (whole)
Tempering
- Cumin Seeds — 1 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Soak the mangodi in warm water for 15 minutes, then drain. Whisk the curd well with some water until smooth, and keep aside.
- Break the papad into small pieces and keep aside separately.
- Heat oil in a pan and add the cumin seeds, letting them crackle.
- Add the soaked mangodi and saute for 2 to 3 minutes until lightly golden.
- Add turmeric powder, red chilli powder, coriander powder and salt, and stir for half a minute.
- Lower the flame and slowly pour in the whisked curd, stirring continuously to prevent it from splitting.
- Add water to get a gravy consistency and simmer on low flame for 8 to 10 minutes until the mangodi is cooked through.
- Add the papad pieces and simmer for another 2 minutes so they soften slightly in the gravy.
- Garnish with chopped coriander leaves and serve hot with steamed rice or roti.
