
Panakam
A cold jaggery water sharpened with dry ginger, cardamom and crushed pepper and lifted with a generous pour of fresh lemon juice, the naivedyam offered at Sri Rama Navami.

Ingredients
- dry ginger powder — 0.33 tsp (ground)
- Water — 2 cup (whole)
- Cardamom — 0.65 piece (whole)
- salt (optional) (whole)
- black pepper — 0.29 tsp (whole)
- Jaggery — 100 g (whole)
- Lemon — 2 tbsp (chopped)
Method
- Crush the Jaggery small so that it dissolves without needing heat.
- Stir the crushed Jaggery into the Water and keep going until the colour is an even amber and nothing is left undissolved at the base of the vessel.
- Add the dry ginger powder, Cardamom and black pepper, and stir well to infuse.
- Squeeze in the Lemon juice and add a pinch of salt, which lifts the sweetness and keeps the drink from tasting flat.
- Strain it through a fine sieve or muslin so none of the jaggery grit or spice fibre reaches the glass.
- Rest for 10 minutes, then taste and adjust. Panakam should be thin, lightly sweet and easy to drink in a single draught.
- Serve cool as naivedyam.
