Method

  1. Dry roast the cumin seeds in a small pan on medium flame until aromatic and slightly darker in colour, then cool and coarsely crush.
  2. Soak the tamarind in warm water for 10 minutes, then squeeze and strain to extract a smooth pulp, discarding the fibres.
  3. Heat the oil in a small pan for tempering; add a portion of the crushed roasted cumin and let it sizzle for a few seconds.
  4. Blend or finely crush the Mint Leaves with a little water into a smooth paste.
  5. In a large jug, combine the water, tamarind pulp, remaining crushed cumin, mint paste, the tempered cumin-oil, and Black Salt and regular salt to taste.
  6. Whisk well until everything is fully combined and no tamarind lumps remain.
  7. Adjust the salt and tanginess to taste, then chill in the refrigerator or add ice before serving.
