
Haryanvi Jal Jeera
A tangy tamarind-cumin water lifted with fresh mint and black salt, lightly tempered and served ice-cold.

- Tamarind — 100 g (whole)
- Mint Leaves — 12 g
- Black Salt — 7.5 g
- Water — 3 cup (whole)
- Cumin Seeds — 3 tsp (whole)

Tempering
Method
- Dry roast the cumin seeds in a small pan on medium flame until aromatic and slightly darker in colour, then cool and coarsely crush.
- Soak the tamarind in warm water for 10 minutes, then squeeze and strain to extract a smooth pulp, discarding the fibres.
- Heat the oil in a small pan for tempering; add a portion of the crushed roasted cumin and let it sizzle for a few seconds.
- Blend or finely crush the Mint Leaves with a little water into a smooth paste.
- In a large jug, combine the water, tamarind pulp, remaining crushed cumin, mint paste, the tempered cumin-oil, and Black Salt and regular salt to taste.
- Whisk well until everything is fully combined and no tamarind lumps remain.
- Adjust the salt and tanginess to taste, then chill in the refrigerator or add ice before serving.
