
Navratri Kuttu Puri
Deep-fried buckwheat-flour bread made for Navratri fasting, rolled from a potato-bound kuttu atta dough and served with curd.

- Potato — 100 g (chopped)
- salt (optional) (whole)
- Curd — 400 g (whole)
- Kuttu Atta (Buckwheat Flour) — 250 g (ground)
Tempering
Method
- Boil the Potato until a skewer slides through easily, then peel it while warm and mash it perfectly smooth.
- Rub the mashed Potato into the Kuttu Atta with salt until the mixture looks like damp crumbs.
- Knead to a stiff, smooth dough, adding water only a few drops at a time, since the potato brings most of the moisture and a slack dough tears when rolled.
- Cover and rest for 10 minutes, then divide into small balls and roll each into a thick, even round between sheets of plastic, since kuttu dough is delicate and tears easily.
- Heat the oil in a deep kadhai until a scrap of dough surfaces briskly without browning at once.
- Fry the puris one at a time, pressing each gently under the oil until it balloons, then turning to colour the second side pale gold. Drain on paper.
- Whisk the Curd smooth with a pinch of salt.
- Serve the hot puris with the chilled Curd, scattered with Coriander Leaves.
