Method

  1. Wash the rice and chicken. Chop the onion, and mince the ginger and garlic. Wash and shred the roselle (kenaf) leaves.
  2. Heat oil in a kadhai or heavy-bottomed pot. Add the chopped onion, ginger and garlic; saute until soft and fragrant.
  3. Add the chicken pieces and turmeric powder. Stir-fry for 2-3 minutes.
  4. Add the rice and water. Bring to a boil.
  5. Reduce heat and simmer, stirring occasionally, until the rice breaks down and the mixture thickens into a soft porridge, about 25-30 minutes.
  6. Stir in the roselle (kenaf) leaves and cook for another 3-4 minutes until wilted.
  7. Adjust salt, garnish with fresh coriander leaves, and serve hot.
