
Meerut Ke Chole

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- coriander powder — 1 tsp (ground)
- Garlic — 1 tsp (ground)
- onion — 2 piece (chopped)
- Ginger — 1 tsp (ground)
- Tomato — 2 piece (chopped)
- Chickpeas — 250 g (whole)
- Turmeric Powder — 0.5 tsp (ground)
- salt (optional) (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Soak the chickpeas overnight, then pressure cook them with salt and enough water until soft, about four to five whistles.
- Heat the oil in a pan for the tempering and add the cumin seeds, letting them crackle.
- Add the chopped onion and saute until golden brown, then add the chopped ginger and garlic and cook until the raw smell goes away.
- Add the chopped tomatoes along with coriander powder, red chilli powder and turmeric powder, and cook until the tomatoes turn soft and the masala releases oil.
- Add the cooked chickpeas along with their cooking water and salt, mixing well with the masala.
- Simmer the chole on medium-low heat for ten to twelve minutes, mashing a few chickpeas lightly to thicken the gravy.
- Garnish with chopped coriander leaves and serve the meerut ke chole hot with bhature or puri.
