  1. To begin making the Hara Chana Masala, soak the dried green chickpeas (hara chana) overnight. Drain, then pressure cook with salt for about 3 whistles until soft and keep aside.
  2. Grind the onion, ginger, garlic and green chillies together into a coarse paste.
  3. Heat the ghee in a kadhai on medium heat and add the cinnamon stick; let it release its aroma.
  4. Add the ground onion paste and saute until it turns golden brown and the raw smell disappears.
  5. Add the chopped tomatoes and cook until they turn soft and mushy.
  6. Add the coriander powder, red chilli powder and garam masala. Cook the masala until it comes together and the ghee begins to separate at the edges.
  7. Add the boiled hara chana along with about 2 cups of water. Season with salt and simmer for 8 to 10 minutes so the flavours blend.
  8. Garnish the Hara Chana Masala with fresh coriander leaves and serve hot with roti or steamed rice.
