
Masala Papad
Crisp roasted papad topped with a tangy mix of chopped onion, tomato, green chilli, coriander, chaat masala and lemon juice. A quick, popular Indian restaurant-style chaat starter.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Chaat masala — 5 g (ground)
- onion — 100 g (chopped)
- papad — 5 piece (whole)
- salt (optional) (whole)
- Tomato — 100 g (chopped)
- Lemon — 15 g (juiced)
- green chillies (optional) — 5 g (chopped)
Method
- Roast the papads directly over an open flame with tongs, or in a microwave, until crisp and lightly puffed on both sides. Set aside.
- In a bowl, mix the finely chopped onion, tomato and green chilli with coriander leaves, chaat masala and lemon juice. Add a small pinch of salt.
- Just before serving, spoon the onion-tomato masala mixture evenly over each roasted papad.
- Serve immediately, while the papad is still crisp, before the topping makes it soggy.
