Karotkhabi Kanghou (Manipuri Bitter Gourd Potato Stir Fry)
Karotkhabi Kanghou is a rustic Manipuri Meitei stir fry combining bitter gourd (karotkhabi) and potato slices, sauteed in oil with onion, cumin seeds, turmeric, and a touch of red chili powder. The bitterness of karela is mellowed by the potato's starch, creating a balanced side dish served alongside steamed rice and ngari-laced curries in a traditional Meitei meal.
