
Mandua Dosa
Crispy crepe made from finger millet batter. Modern Uttarakhand adaptation of South Indian dosa with local millet.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- green chillies — 10 g (whole)
- Ragi Flour — 250 g (ground)
- salt (optional) — 8 g (whole)
- Water — 500 ml (whole)
- Rice Flour — 150 g (whole)
- Cumin Seeds (optional) — 5 g (whole)
Tempering
Method
- Mix ragi flour and rice flour together in a large bowl.
- Gradually add water and whisk to a smooth, lump-free, pouring-consistency batter.
- Add finely chopped green chilli, cumin seeds, chopped coriander leaves and salt; mix well and rest for 15-20 minutes.
- Heat a tawa on medium-high flame and drizzle a little oil.
- Pour a ladleful of batter and spread quickly into a thin crepe.
- Drizzle a little oil around the edges and cook until the base turns crisp and golden brown.
- Fold and serve hot with coconut chutney or green chutney.
