
Kumaoni Mandua Halwa

- Ragi Flour — 250 g (ground)
- salt (optional) (whole)
- sugar — 0.5 cup (whole)
- Jaggery — 100 g (whole)
- Ghee — 100 g (whole)
Method
- Heat ghee in a heavy-bottomed pan over low heat.
- Add the mandua (ragi/finger millet) flour and roast on low flame, stirring continuously, until it turns aromatic and slightly darker (about 8-10 minutes).
- Heat water separately and add slowly to the roasted flour, stirring constantly to avoid lumps.
- Add jaggery (and sugar if using); stir until fully dissolved.
- Cook, stirring, until the halwa thickens and leaves the sides of the pan.
- Add cardamom powder, mix well and serve warm.
