
Kozhikodan Halwa
Glossy, chewy Kozhikode (Calicut) halwa made from refined wheat flour slaked in water, cooked down with sugar and pure coconut oil, and flavoured with cardamom and cashews. Coconut oil — not ghee — gives it its signature taste.

- Cardamom — 2 piece (ground)

- All-purpose Flour — 100 g (ground)
- Water — 200 g (whole)
- sugar — 0.5 cup (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Whisk the refined flour (maida) with water into a thin, lump-free batter and strain.
- Dissolve the sugar in water and bring to a boil, then pour in the strained flour batter, stirring continuously.
- Keep stirring on low-medium flame, adding the coconut oil little by little, until the mixture turns thick, glossy and pulls away from the pan (about 30-40 minutes).
- Stir in cardamom powder and fried cashews. Spread onto a greased tray, cool, and cut into pieces.
