
Khoya Jalebi

Garnish
- Cardamom — 2 piece (ground)
- Saffron (optional) (garnish) — 0.15 g (ground)

- sugar — 300 g (whole)
- Khoya (Dhap - Soft/Moist) — 250 g (whole)
- Milk — 30 g (whole)
- All-purpose Flour — 50 g (whole)
Tempering
Method
- Crumble the khoya and mash with the milk until smooth and lump-free.
- Add maida to the khoya-milk mixture and mix into a medium-thick, flowing batter. Rest in a warm place for about an hour.
- Make the sugar syrup: dissolve sugar in water with cardamom powder and saffron; simmer to a one-string consistency.
- Heat oil in a shallow kadhai on medium flame. Fill the khoya-maida batter into a piping cone and pipe spirals directly into the hot oil.
- Fry the jalebis on medium-low heat until golden and crisp on both sides.
- Immediately drop the hot fried jalebis into the warm sugar syrup and soak for 1-2 minutes.
- Lift out, drain excess syrup, and serve hot, garnished with a few saffron strands.
