
Kadhi (Central Gujarat)
Sweet-sour Gujarati kadhi of curd and gram flour, tempered with mustard seeds, cumin and curry leaves and lightly sweetened with sugar - thin, no pakoras, a staple of the Gujarati thali.

Main
- Gram Flour — 35 g (ground)
- green chillies — 6 g (chopped)
- Ginger — 4 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- Curd — 320 g (whole)
- sugar — 15 g (whole)
- Red Chilli Powder (Lal Mirch) — 1.5 tsp (ground)

Tempering
- Mustard Seeds (Black) — 3 g (whole)
- Cumin Seeds — 1 tsp (whole)
- Curry Leaves — 4 g (whole)
- oil — 15 tbsp (whole)
Method
- Whisk the curd and gram flour together with 2-3 cups of water until smooth and lump-free.
- Heat oil in a kadhai; add mustard seeds and cumin seeds, letting them splutter.
- Add curry leaves, chopped ginger and green chilli; saute briefly.
- Add turmeric powder and red chilli powder, then pour in the curd-besan mixture, stirring continuously to prevent curdling.
- Bring to a gentle boil on low-medium flame, then add sugar and simmer 15-20 minutes, stirring often, until slightly thickened.
- Adjust salt and sweetness to taste.
- Garnish with coriander leaves and serve hot with khichdi or steamed rice.
