
Dubki Kadhi
Curd and gram-flour kadhi with soft urad dal dumplings (dubki) dunked into the simmering broth. Janjgir everyday comfort dish.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Gram Flour — 100 g (ground)
- Urad Dal — 100 g (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Tomato — 2 piece (chopped)
- Turmeric Powder — 0.5 tsp (ground)
- Ginger — 1 tsp (ground)
- onion — 2 piece (chopped)
- salt (optional) (whole)
- Curd — 100 g (whole)
- coriander powder — 1 tsp (ground)
- Garlic — 1 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Whisk the curd with the gram flour and enough water to make a smooth, lump-free batter. Keep aside.
- Wash and soak the urad dal for 15 minutes, then drain and grind coarsely, or shape into small dumplings if using whole, and set aside.
- Heat oil in a deep pan and add the cumin seeds, letting them splutter.
- Add the chopped ginger and garlic, and saute for a few seconds till fragrant.
- Add the chopped onion and cook till soft and translucent, then add the chopped tomato, coriander powder, red chilli powder and turmeric powder, and cook till the tomato softens.
- Pour in the curd and gram flour batter, add the urad dal dumplings, and add water to get a flowing gravy consistency. Bring it to a boil, stirring continuously to avoid the curd splitting.
- Lower the flame and let the kadhi simmer for 12 to 15 minutes till it thickens slightly and the raw gram flour smell goes, stirring often.
- Check salt, garnish with chopped coriander leaves and serve hot with steamed rice.
