
Indori Shikanji
Chilled lemon water sharpened with roasted cumin, black salt and mint - a refreshing Indori-style shikanji.

Ingredients
Garnish
- Mint Leaves (garnish) — 1 g
- cumin powder (garnish) — 0.5 g
Main
- salt (optional) (whole)
- Black Salt — 2.5 g
- Water — 1.04 cup (whole)
- Lemon — 30 g
Method
- Squeeze the Lemon into a large mixing jug or bottle.
- Add the Water and Black Salt along with salt to taste, then whisk or shake vigorously until fully dissolved.
- Stir in the roasted cumin powder for the signature Indori jeera tang.
- Muddle in the Mint Leaves lightly to bruise them and release their aroma.
- Cover and chill in the refrigerator for a few minutes, then strain and serve cold.
