  1. Soak the tamarind in a little warm water for 15 minutes, then extract the pulp and keep aside.
  2. Grease idli moulds with a little of the coconut oil, fill with the Kanchipuram idli batter and steam for 10 to 12 minutes till a toothpick inserted comes out clean; unmould and keep the idlis aside.
  3. In a separate bowl, mix a portion of the urad dal into a thick batter, shape into small vadas, and deep fry in hot ghee till golden and crisp; drain and keep aside.
  4. In a pot, pressure cook the toor dal with the mixed vegetables, chopped onion, turmeric powder and salt in the water until soft and mushy, about 3 to 4 whistles.
  5. Mash the cooked dal and vegetables lightly, stir in the tamarind pulp and sambar powder, and simmer on medium flame for 8 to 10 minutes till the raw smell of tamarind goes and the sambar thickens slightly.
  6. Heat the coconut oil in a small tempering pan and pour it sizzling over the simmering sambar for aroma.
  7. Place the idlis and vadas in a deep bowl, pour the hot sambar generously over them so they soak it up.
  8. Garnish with chopped coriander leaves and serve hot immediately.
