
Hubli Benne Dosa
Thick spongy dosa dripping with butter cooked on a large tawa. Hubli-Davangere style benne dosa served with spicy chutney pudi.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Dosa Batter (Classic) — 250 g (whole)
- salt (optional) (whole)
- Butter — 100 g (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Use well-fermented classic dosa batter. Stir in a little salt and loosen with water to a slightly thick but pourable consistency.
- Heat a cast-iron tawa on medium. Sprinkle a few drops of water and a little oil and wipe the tawa.
- Pour a ladle of batter and spread into a thick dosa (not too thin). Add a generous dollop of butter around and on top.
- Cook on medium until the base turns golden and crisp and the top is set and spongy. Fold and remove.
- Serve hot with coconut chutney and potato palya.
