Crispy fermented rice-urad dosa from the steel town of Bhadravati. Slightly thicker with a golden crust, served with coconut chutney.

Method

  1. Soak rice, urad dal, chana dal and fenugreek seeds together for 4-6 hours.
  2. Drain and grind to a smooth, flowing batter (thinner than idli batter) adding water as needed.
  3. Add salt, mix well and ferment in a warm place for 8 hours until the batter rises and turns bubbly.
  4. Grind coconut with green chilli, salt and water to make coconut chutney; keep aside.
  5. Heat a tawa well. Pour a ladleful of batter and spread thin in a circular motion.
  6. Drizzle coconut oil around the edges and cook on medium-high flame until the base turns golden and crisp.
  7. Fold and serve hot, garnished with coriander leaves, alongside coconut chutney.
