
Bhadravati Dosa
Crispy fermented rice-urad dosa from the steel town of Bhadravati. Slightly thicker with a golden crust, served with coconut chutney.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- methi seeds (optional) — 4 g (whole)
- Coconut — 100 g (chopped)
- rice — 300 g (ground)
- Urad Dal — 75 g (whole)
- Chana Dal (optional) — 15 g (whole)
- salt (optional) — 8 g (whole)
Tempering
- Coconut Oil — 1 tbsp (whole)
- green chillies — 8 g (whole)
Method
- Soak rice, urad dal, chana dal and fenugreek seeds together for 4-6 hours.
- Drain and grind to a smooth, flowing batter (thinner than idli batter) adding water as needed.
- Add salt, mix well and ferment in a warm place for 8 hours until the batter rises and turns bubbly.
- Grind coconut with green chilli, salt and water to make coconut chutney; keep aside.
- Heat a tawa well. Pour a ladleful of batter and spread thin in a circular motion.
- Drizzle coconut oil around the edges and cook on medium-high flame until the base turns golden and crisp.
- Fold and serve hot, garnished with coriander leaves, alongside coconut chutney.
