
Holige
Karnataka festival sweet flatbread (bele holige / obbattu): a soft maida dough stuffed with a sweet cooked filling of chana dal and jaggery flavoured with cardamom, rolled thin and griddled on a tava.

Ingredients
- Cardamom — 2 piece (ground)
- salt (optional) (whole)
- Jaggery — 100 g (whole)
- Coconut Oil — 2 tbsp (whole)
- Chana Dal — 0.5 cup (whole)
- All-purpose Flour — 1 cup (whole)
Method
- Knead the maida with a little salt, water and a spoon of oil into a soft, pliable dough. Rest it under oil for 1-2 hours.
- Pressure-cook the chana dal till soft, drain well, then cook it with jaggery until thick. Add cardamom powder and grind into a smooth puran (filling).
- Take a ball of dough, stuff with an equal ball of filling, seal and roll out thin on a greased surface.
- Roast on a hot tava with a little oil on both sides until golden spots appear. Serve warm.
