
Ragi Laddu

- Cardamom — 2 piece (ground)

- Jaggery — 100 g (whole)
- Coconut — 100 g (chopped)
- Ragi Flour — 250 g (ground)
- salt (optional) (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Dry-roast the ragi flour in a heavy pan on low flame, stirring continuously, until it turns aromatic and slightly darker in colour.
- Add the grated coconut to the roasted ragi flour and roast together for another minute or two.
- Heat the coconut oil separately and melt the jaggery in it on low flame until it forms a thick syrup.
- Pour the jaggery syrup over the roasted ragi-coconut mixture along with the cardamom powder and mix thoroughly.
- While the mixture is still warm, shape it into firm round laddus and let them cool completely before storing.
