
Gur Roti
Jaggery-stuffed flatbread. Simple Jharkhand winter sweet roti with ghee.

- salt (optional) (whole)
- Jaggery — 100 g (whole)
- Wheat Flour (Atta) — 250 g (ground)
- Ghee — 100 g (whole)
Tempering
- Mustard Oil — 2 tbsp (whole)
Method
- Knead the wheat flour with a little ghee, salt and water into a soft dough. Rest for 15 minutes.
- Mash the jaggery with a little ghee to make a coarse filling.
- Divide the dough into balls, flatten each, place a portion of the jaggery filling in the centre, seal the edges well and gently roll or pat out into a roti.
- Cook on a hot tawa with mustard oil/ghee on low-medium flame until golden brown on both sides -- go slow so the jaggery does not burn or ooze out.
- Serve hot with a dollop of ghee.
