Hari Tamatar Sabzi (North Indian Tangy Green Tomato Curry)

Hari Tamatar Sabzi is a tangy North Indian curry made with unripe green tomatoes (hari tamatar). The acidic green tomatoes are cooked down with cumin seeds, mustard seeds, asafoetida, turmeric, red chili powder, coriander powder, garam masala, dry red chilies, and kasuri methi until soft and pulpy. The naturally tart green tomatoes provide a refreshing alternative to ripe tomato curries — served with phulka roti, jeera rice, or parathas.
