Method

  1. Peel and grate the bottle gourd (dudhi). Squeeze out excess water lightly.
  2. Heat ghee in a heavy pan and saute the grated dudhi on low flame until the raw smell goes and it softens.
  3. Add the milk and cook, stirring often, until the milk reduces and is absorbed by the dudhi.
  4. Add sugar and saffron; the mixture will loosen again. Keep cooking and stirring until it thickens to a glossy halwa and ghee starts to separate.
  5. Stir in cardamom powder. Garnish with nuts and serve warm.
