
Dudhi Halwa Gujarati

- Ghee — 50 g (whole)
- Saffron — 0.5 g (ground)
- Bottle Gourd — 500 g (chopped)

- sugar — 100 g (whole)
- Milk — 200 g (whole)
Method
- Peel and grate the bottle gourd (dudhi). Squeeze out excess water lightly.
- Heat ghee in a heavy pan and saute the grated dudhi on low flame until the raw smell goes and it softens.
- Add the milk and cook, stirring often, until the milk reduces and is absorbed by the dudhi.
- Add sugar and saffron; the mixture will loosen again. Keep cooking and stirring until it thickens to a glossy halwa and ghee starts to separate.
- Stir in cardamom powder. Garnish with nuts and serve warm.
