
Doodh Jalebi
Hot jalebis dunked in warm sweetened milk. Jat winter morning indulgence.

- Cardamom — 2 piece (ground)

- sugar — 0.5 cup (whole)
- All-purpose Flour — 1 cup (ground)
- Milk — 100 g (whole)

Tempering
Method
- In a bowl, mix the maida with the milk and a pinch of salt to form a smooth, slightly thick batter with no lumps. Cover and let it ferment for a few hours till it turns light and slightly bubbly.
- Meanwhile, make sugar syrup by dissolving the sugar in a little water and heating till it turns sticky and one-string consistency. Add crushed cardamom to the syrup and keep it warm.
- Pour the fermented batter into a piping bag or a cloth with a small hole.
- Heat oil in a wide pan on medium flame. Pipe the batter in circular jalebi shapes directly into the hot oil.
- Fry the jalebis till they turn crisp and golden on both sides, turning once.
- Drain the fried jalebis and dip them immediately into the warm cardamom sugar syrup for a minute so they soak it up well.
- Take them out of the syrup and serve the doodh jalebi warm, drizzled with a little extra milk if you like it richer.
